Windows… well at least some of them

Windows are beginning to get installed this week, which makes this house feel like, well, a house. I’m pretty amazed at how each piece makes things feel very different.

Late last week, Ben went by the new house during lunch since he likes to micromanage things (we’re probably the worst clients ever…two super detail- oriented people. Or maybe, we’re the best people to build a home?!) and noticed that many of the windows delivered were all the wrong color. Some of our windows are vinyl — the ones on the back or sides of the house. But, many of them are wood, particularly the ones on the front of the house or other areas that we wanted a more custom, cross-hatch look such a the breakfast nook.

So, we basically had a ton of almond-colored windows delivered. This isn’t good when you ordered white ones, plus we’re leaning toward having a white  house. For a good hour, we thought thousands of dollars were going to be wasted and Ben was trying to figure out if there was any way to paint vinyl windows or get them returned. Plus, all these windows were sitting in the house and a crew was scheduled to come out and install them that afternoon. After a few calls, we discovered the window company was the one at fault. So, that was good news but it obviously has caused some delays with window installation since some of the windows need to be custom made.

So, we’re a few days delayed now, but at least we’re getting the windows we want.

Blueberry Banana Bread

We always try to eat and cook using seasonal ingredients. We eat a TON of blueberries in our house. My husband loves putting them in his cereal, and I usually eat daily for breakfast with my yogurt or snack on them plain. And, blueberries are the ultimate go-to toddler snack since they are perfectly bite-size.

I came across this Giada recipe two years ago and I’m so glad I did! It’s full of blueberries and makes a great breakfast or sweet treat.

It’s also an easy way to get some fruits into your kiddo’s diet, too. Braden loves it!

Similar to my banana bread muffin recipe I previously shared, I like to use my secret ingredient.

It seems like all I do is share carbs, but I actually cook pretty healthy most nights, but I have to give in to those cravings. I definitely believe in the all about moderation and with two bananas and one cup of blueberries in this recipe, I don’t’ feel too bad about eating this.

Ingredients:

Butter, for greasing the loaf pan

1 ½ cups all purpose flour, plus a little extra for dusting the loaf pan

1 tsp baking soda

1 tsp fine salt

½ tsp baking powder

½ tsp ground cinnamon

½ tsp ground nutmeg

1 cup sugar

½ cup vegetable oil

2 large eggs

2 tsps vanilla extract (but I change it up and use this instead)

2 ripe bananas, mashed

1 cup fresh blueberries

Directions:

Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Butter and flour a 9- by 5- by 3-inch loaf pan. Set aside.

In a medium bowl, whisk together the flour, baking soda, salt, baking powder, cinnamon and nutmeg. In a large bowl, beat the sugar, oil, eggs and vanilla until blended. Stir in the bananas and blueberries. Add the dry ingredients and stir just until blended.

Pour the batter into the prepared loaf pan. Bake until a cake tester inserted in the center of the loaf comes out clean, about 1 hour. Cool for 15 minutes. Remove the loaf from the pan and cool completely on a wire rack, about 2 hours.

Prep time: 15 minutes. Cook time 1 hour. It took about 55 minutes in my oven, so I would recommend watching it and checking with a toothpick starting at 50 minutes.

Makes 1 loaf or  6-8 servings. I think this is more than 8 servings in my house.

Lucas Family Home Update: Sheeting and more

I took a little hiatus from updating on the blog because…well, life. Something’s got to give. I need to be a better planner when it comes to this whole blog thing, but I’m not quite there yet. Bear with me, please.

We’ve had a lot of progress on the home front in the past two weeks since my last post on the framing. We have sheeting now. The plywood sheeting material stabilizes the house so it doesn’t collapse from the wind. That’s about my level of expertise on that subject.

With a custom house, you have to be flexible and willing to roll with changes that come your way. There have been some changes due to engineering vs. architectural plan differences. Therefore, we had to alter the roof line a tad.

Then, the eaves, soffits and roof sheeting were completed. Soffits are the material forming a ceiling from the top of an exterior house wall to the outer edge of the roof, i.e., bridging the gap between a home’s siding and the roofline, otherwise known as the eaves. (thanks, Wikipedia.)

We are now ready for windows, doors, siding and shingles, which should come in the next week. It’s starting to look like a real house!

Behind the scenes, we’ve finalized plans for  light fixtures and electricity since that will be installed next. I may have bought a light fixture already because I came across a sale online for one I really liked. Online shopping is the best. 🙂 We also had to make a decision on a range and purchased that as well. We’re starting to acquire a lot of stuff. And, we really need to plan for our move out of our current house and purge. Details, details.

I’m aiming to make a schedule over the weekend to get a little organized when it comes to our current home because we’ve just been going a mile a minute and haven’t been purging and organizing as much as we should. Maybe if I tackle a little per week it won’t feel so overwhelming, right? Things are a little overwhelming right now, especially with a 23 month old speaking to you and saying things  but you have no idea what he means, then he gets frustrated because you don’t know what he’s saying.  But, the constant “mama, I wuv yooouu” makes up for it.

Second Story Framing

June 15, 2016

The second story framing is pretty much complete! We did a walk through with the builder last week, going through aspects that need to be corrected. i.e. missing a window here, this should be a pocket door not a regular door, etc. Missing a window might sound crazy, right? It’s actually not that big of a deal. The front door is actually incorrect since we are having a custom door made, but it will be fixed.

When you’re building a custom home mistakes will be made, and we understand that. You just have to be diligent in reviewing all the details and making note of that during check-in periods. I feel like I’m a broken record with this statement, but I can really start to visualize the scale of things now! I’m just a visual person, and it just feels so different to see on paper then to see it in-person. The house will be inspected this week for the hurricane clips that were put in to secure things and then we’ll start sheeting later this week, I believe. Or, that’s what I’m told by Ben at least. 🙂

We’re nearly a week away from Father’s Day so I’ve been searching online for the best gift Amazon Prime has to offer. I kid (sort of) but most of these gifts are available on Amazon or online retailers that will ship to you in time for you to give to your dad or husband. I am SO thankful for my hubby and appreciate all he does for us. So, in honor of him I’ve rounded up some gifts that are right up his alley.  Many of these he already has (it’s a little insane how many Yeti products are in our home),  but I know a few are on his wish list, too. My husband has a lot of outdoorsy hobbies and likes to make an old-fashioned almost daily. So, I give you the best gifts for  the dad who likes to hunt, shoot guns and keep his drinks cool all while practicing these hobbies.

Beach getaway essentials

I’m heading out on a much-needed vacation this week. It’ll be our first trip sans kiddo. Like I said, much needed. 😉

I find myself packing similar things when I’m headed to a tropical destination, so I’m sharing some of my beach essentials.

  1. White swim cover-up: I love the look of a white swim cover-up. I love white summer clothes in general. I gravitate toward cover-ups that have a boho-vibe, and white cover-ups  go with all swimwear.
  2. Turquoise jewelry: I wear a lot of turquoise jewelry once spring and summer hit.. Turquoise jewelry never really goes out of style and I’ve had some of these pieces for years. I have this bangle from this small shop called Jiggy and Wells that a former co-worker recommended to me, and I layer with other bracelets.
  3. Flip flops: I still go back to some of my stand-by flip flops year after year regardless of other sandals that are in style. I have a mix of both inexpensive beach flip flops and a little nicer ones that you can wear with a summer dresses or white jeans and tops. I’ll forever be a flip flop gal even though some fashion mags say flip flops are a flop!
  4. Swimwear that makes you feel comfortable. I think people often go with swimsuits based on trends versus what works for their  body type. I’m not curvy, so a string bikini looks better on me in my opinion. I think one piece swimsuits have come a long way, so I have found one or two I like.  But, I think finding one you feel comfortable in is essential.  Pulling and tugging the one you’re wearing and worrying if things shouldn’t be showing just isn’t worth it, especially if you should be lounging.
  5. Classic sunglasses: Every pair of sunglasses I own is a prescription pair. I had Lasik 10 years ago and don’t need glasses anymore, but have a very slight prescription that I just use to get sunglasses since I have to still get eye check-ups. I prefer classic sunglasses like Ray-ban aviators and always get them polarized.
  6. Beach bag: My best friend got married a month ago and gave us cute, striped monogrammed beach bags with a fun rope handle, similar to the one seen in this post here. I’ll be sporting that one during my beach trip. I always have my beach bag double as my plane carry on.

Looking back on a few of my beach escapes, I always pack these items. Do you have any beach essentials you can’t live without?

Rain, rain go away

It’s been raining SO much in Houston lately, which puts a big damper on the home-building process.

Since we’re working with more of a boutique builder, things are probably a little slower than you’d expect. Couple that with the weather, and things seem to be moving along S L O W L Y. We did see some progress this week with the second floor trusses delivered and the second floor framing process started.

Behind-the-scenes, we’re trying to finalize kitchen appliances and this is going to ultimately impact the design and layout of the cabinets. I must admit,  Ben and I are not on the same page when it comes to certain aspects of the kitchen. We cook and eat at home a lot so I think the kitchen is probably the most important home in our house since it gets the most use. We’ll have a very open kitchen/living area concept. BUT, we have a budget and we know we’re going over it. We’re just trying not to go over it TOO much.

Next, we need to sit down and figure out the electrical and lighting plans. Thinking about where you want a light in every part of the home is overwhelming and in some cases, knowing where we want certain types of lights this early on seems ridiculous and even more overwhelming. Single sconce vs. overhead sconces? Canned lights? Chandelier? This needs to be decided because we need to let the builder know so the electrician can then update plans and go in and do all the wiring once the framing is complete. If you don’t like to be in the weeds or think about details like this then maybe a custom home from scratch isn’t for you. But, we’re DIY people and these decisions are ones we like being involved in.

I pretty much wear workout clothes all weekend long whether I’m working out or not. But, more often than not, I’m heading to spin at Define on Saturday morning. I’ve been a pretty big Rev fan since they started it a few years ago. I credit it for helping me lose all my baby weight within a couple of months after B was born. I try to be active throughout the weekend, going on pretty long neighborhood walks and often doubling up and doing yoga on Saturday and Sunday evenings since I’m not really working out as often as I used to on weekdays. A 7:45pm toddler bedtime will do that to ya. So, I’m changing in and out of workout wear all weekend long.

 I picked up a few things at the Nordstrom half yearly sale, which just kicked off this week and is running through June 5. It’s a great opportunity to stock up on some staple athleisure wear pieces at a fraction of the cost. I bought a new pair of Nike tennis shoes from the sale yesterday and a few other things online to add to my weekend wardrobe.

Breakfast Nooks

I love a good eating nook. I love the casual simplicity of a bench paired with a table that doesn’t necessarily match. When we designed the new house, I knew I wanted a cozy, built-in banquette. Not only does it offer storage, it has a nice window area that lets in some natural light. I envision this as the epicenter of many family meals and conversations. I often wake up to the sound of a waffle maker in my house, and I can see our family enjoying many morning waffle feasts around this table. Here are a few breakfast nooks I’ve found for inspiration.

Stuffed Shells

I’m a fan of Italian food, but it’s a little heavy to eat more than once or twice a week in my opinion. I tend to cook a little lighter. Sorry, Giada. I do get in the mood for the cheesy goodness that many pasta dishes offer and this recipe for Stuffed Shells never disappoints.  My 21-month-old loves it, and so does my 416-month-old, making this recipe a family-friendly winner. 🙂

I really have been just trying to survive lately, prepping more food on the weekends to avoid making choices I know I’ll regret on weeknights. Or,   I often make super simple non-recipe meals on weeknights  –  i.e. salmon, sweet potato + salad – since I get home after work and I want to spend as much time with the kiddo versus getting stuck in the kitchen. That’s why recipes like this that can carry over for more than one weeknight meal are perfect for me. I usually pair it with a salad or another veggie I already have in my fridge. And, this since they are individual shells, it’s built-in portion control.

I think pasta often gets a bad wrap for the carbs, but when you eat it in moderation and you serve with something green, it can be a healthy meal. My motto is to live a little or you’ll end up binge eating later. I eat pretty healthy 80% of the time, but sometimes I just need something a little more hearty like this!

Turkey and Artichoke Stuffed Shells

Serves 6 to 8 (This is a perfect meal to give to friends, a new mom or for a potluck. You can freeze it, too!)

1 (12 ounce) box jumbo pasta shells

3 tablespoons extra-virgin olive oil

1/2 large yellow onion, chopped (about 1 cup)

1 pound ground turkey ( I used 93 % lean)

1 ( 8- to 10-ounce) package frozen artichokes (I used a whole 12-ounce package I found at Kroger)

1 (15-ounce) whole milk ricotta cheese ( I used part-skim ricotta)

3/4 cup Parmesan cheese

2 eggs, lightly beaten

1/4 cup chopped fresh basil

2 tablespoons chopped flat-leaf parsley (I used 1 tbsp dried)

2 jars marinara sauce ( I used approx. 1.5 jars of organic marinara I had in my pantry. I opted for this since I wanted to make it toddler-friendly. The original recipe calls for Arriabiata and although it’s delish, it can be a little spicy.)

1 1/2 cups grated mozzarella cheese (about 5 ounces; I just eyeball this and probably use less)

DIRECTIONS

Preheat oven to 350 degrees F.

Bring a large pot of salted water to a boil over high heat. Add the pasta and partially cook until tender but still very firm to the bite, stirring occasionally, 4 to 5 minutes. Drain.

Meanwhile, in a large, heavy skillet, heat the olive oil over medium-high heat. Add the onion and the garlic and cook until the onion is soft and starts to brown, about 3 minutes. Add the ground turkey, 1/2 tsp salt, and 1/4 tsp pepper and continue to cook, stirring occasionally until the meat is lightly golden and cooked through. Add the artichoke hearts and stir to combine. Remove from the heat and let cool.

In a large bowl, combine the cooled turkey mixture with the ricotta cheese, Parmesan cheese, eggs, basil, parsley, 1/2 tsp salt, and 1/2 tsp pepper. Stir to combine.

Cover the bottom of the a 9 x 13 x 2-inch baking dish (I used 3 different baking dishes so I could give one to a friend) with 1 cup of marinara sauce. Hold a shell in the palm of your hand and stuff with a large spoonful of turkey mixture, about 2 tablespoons. Place the stuffed shell in the baking dish. Continue filling the shells until the baking dish is full; you should have about 36 shells. Drizzle the remaining marinara sauce over the shells and top with the grated mozzarella. Bake until the shells are warmed through and the cheese is beginning to brown, about 25 minutes.

TIPS: I have adapted this recipe to make it easier on me, using some store bought items like jarred marinara, which I always have handy. I’ve made notes in the ingredient list. Do NOT use canned artichokes. I personally don’t like the taste of them, and I once used and it did not taste right. Lots of places sell frozen artichokes such as Whole Foods, Trader Joes and Kroger. I think I have used hot Italian turkey sausage before. You can  swap out the protein for others like sirloin, ground chicken, etc. and I’m sure it’ll turn out just as well.

IF FREEZING: Cover tightly with plastic wrap and place in the freezer for 1 day and up to 1 month. To bake, preheat the oven to 400 degrees F. Bake until the shells are warmed through and the cheese is beginning to brown, about 60 minutes (20 minutes if shells are unfrozen.)
